Chicken lasagna rolls.


Cook sheets of lasagna in boiling water until fully cooked and soft.

Or use Cannelloni tubes with no pre-cooking, which ever you prefer.
In a separate saucepan cook some onion,peppers,mushroom,chicken and tinned tomatoes.

Season with salt,pepper,chili,herbs and one chicken stock cube.
Once the lasagna is cooked,drain off water.

Lay flat on a chopping board and put one big spoon of chicken,tomato mix and roll up/ into the cannelloni tubes.

Lay in rows in an oven proof dish.

Spread seasoned pasatta all over the top (put in enough to cover all the pasta) and some grated cheese (synned if not hex A).

Bake for 20 mins.

Serve with a side salad.

Meatball Pasta Bake
Serves 4 Syns per serving: Free (if you are using the cheese as your hex a)
Ingredients
600g Extra Lean Pork Mince (Tesco Extra lean British Pork Mince)
6 spring onions finely chopped
1 tsp Schwartz perfect shake garlic Italian herb & spice
blend 1 tbsp tomato puree 1 tbsp Worcestershire sauce
salt and freshly ground pepper
fry light
1 onion finely chopped
2 garlic cloved finely chopped
2 x 400g cans chopped tomatoes
50ml chicken stock
2 tsp dried oregano
300g dried penne
120g cheddar grated
little gem lettuce leaves dressed with lemon juice, to serve
Method
Preheat your grill to medium -high and line your grill tray with foil. Mix together the pork mince, spring onions, Italian seasoning, tomato puree and Worcestershire sauce and season. Shape into 20 balls then arrange on your grill rack and cook for 10-12 mins turning occasionally until the meatballs are browned all over.
Meanwhile place a large pan sprayed with fry light over a medium heat. Fry the onion for 1-2 minutes, then add the garlic and cook for a further minute. Add the chopped tomatoes, chicken stock and oregano season well and bring to the boil. Reduce the heat and then simmer for 15 minutes, stirring occasionally until the sauce has thickened
Cook the penne according to the packet instructions then drain and return to the pan.
Preheat your oven to 200degC fan 180degC /gas 6. Pour the sauce over the penne and stir in the meatballs. Transfer to a medium deep baking dish, sprinkle over the cheddar and bake for 30 minutes until bubbling and golden. Divide the bake between 4 plates ans serve with the dressed little gem leaves.
If you cant get the Tesco mince then the lean pork mince is 1/2 per serving.

Chilli Con Carne Syn Free
ingredients
Low calorie cooking spray
1 large onion, finely chopped
2 garlic cloves, crushed
2 fresh chillies, deseeded and chopped
2 tsps ground cumin
1 tsp ground coriander
1 tsp paprika
A pinch of cayenne pepper
1 x 400g can chopped tomatoes
275g stock
Salt and ground black pepper
450g extra lean beef mince (or Quorn mince)
1 x 200g can red kidney beans, drained
Chopped fresh coriander leaves, to garnish
1 level tablespoon of tomato puree
method
Spray a large saucepan with low calorie cooking spray and fry the onion gently over a low heat for 5 minutes, until softened and golden. Add the garlic, chillies and all the spices and continue frying, stirring occasionally, for 2-3 minutes. Add mince, stirring until it begins to brown.
Add the canned tomatoes, tomato puree and stock. Stir well and bring to the boil. Reduce the heat and simmer gently for 20 minutes, until the liquid is slightly reduced. Season with salt and pepper and add drained kidney beans. Heat through gently for about 5 minutes. Tip: Chef's tip: Add chopped yellow and red peppers to your chilli to boost your Super free.
